Quick and delicious Chunky Hummus makes for fantastic snack or appetizer. Serve with pita chips or bread. Pair it with a fruit plate, dip your veggies in it or spread on a sandwich for a rich full bodied flavor. Hummus is full of protein, vitamins, and fiber. It is an incredible, healthy and delicious treat. Spice it up with a little cayenne pepper, add as much garlic as you like. Make it your own. You will love it.
In incredible, delicious healthy snack that, sometimes, I just have for dinner!
Ingredients:
2 15 oz cans garbanzo beans
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Soy Sauce
1 Tablespoon Rice Vinegar
2-4 cloves chopped Garlic (as much or as little as you like)
1/2 Lemon, juiced
1 teaspoon Cayenne (optional, leave out for those who don’t like spice)
1 Tablespoon fresh Cilantro, chopped
1/2 of a 15 ounce can diced fire roasted tomatoes
3 Green Onions, chopped
Crumbled Feta Cheese to Sprinkle (optional)
Directions:
Blend first 7 ingredients in a food processor or blender until smooth. Fold in tomatoes and green onions. Sprinkle crumbled Feta Cheese on top to taste.
